Pumpkin Bread

 I love this time of year because I get to make pumpkin everything!  I never cared much for pumpkin until I was pregnant with Olivia and since then, I can't get enough!  So, it's no surprise that Olivia is a fan of pumpkin as well.  She loves to help me in the kitchen so I'm always trying to find cooking projects we can do together so we tried out a recipe I've been wanting to make, pumpkin bread!  It turned out to be very simple, and very yummy!

First you need this list of ingredients:

1 15oz can of pumpkin
3 cups of sugar
1 cup of water
1 cup of vegetable oil
4 eggs
3 1/3 cups of flour
1t baking powder
1t baking soda
1/2t nutmeg
2t cinnamon
3/4t ground cloves
1t salt

Then you need a cute little helper to help you measure out the pumpkin, sugar, water, oil and eggs into a bowl.


Then, wipe all excess sugar off of your hands onto the floor for mommy to sweep up later.


 Next, beat the pumpkin mixture until it is well mixed.


In a separate bowl, mix the flour, baking soda, cinnamon, salt, baking powder, nutmeg and ground cloves.


You may want to measure just a little extra to account for any messes you make! 


Then stir the flour mixture.


You know you are done stirring when the counter is covered in flour.


Slowly beat the flour mixture into the pumpkin mixture until it looks like this.


Don't forget to do a taste test to make sure it tastes alright!


If you get a smile, you are good to go!


Then evenly divide the mixture into 2 bread loaf pans and bake at 350 for 60-70 minutes!

I find that giving the cook frequent kisses helps for a better tasting product!


This bread is definitely yummy enough to eat both loaves of bread yourself, but if you want to be nice you could package one up and send it as a gift.  Since I didn't have any orange ribbon, I used Olivia's markers to make a pumpkin to make the bread look a little more festive and Olivia brought this for her daycare teachers this morning.  It's the least we can do for them with all that they do for Olivia.


After the difficult time I had finding canned pumpkin last year from the pumpkin shortage, I decided to stock up so we're expecting to make a lot more pumpkin goodies!
